Bahan-bahan

Kulit Tart:

  • 250 gram tepung terigu protein rendah
  • 150 gram mentega dingin, potong dadu
  • 50 gram gula halus
  • 1 butir kuning telur
  • 2-3 sendok makan air es

Krim Isian:

  • 250 ml susu cair
  • 50 gram gula pasir
  • 25 gram tepung maizena
  • 1 butir kuning telur
  • 1 sendok teh ekstrak vanila
  • 25 gram mentega

Topping Buah:

  • Stroberi, iris
  • Kiwi, iris
  • Jeruk mandarin, pisahkan segmennya
  • Anggur, belah dua
  • Blueberry (optional)

Lapisan Glaze (Opsional):

  • Agar-agar plain 1/2 sendok teh
  • Gula pasir 1 sendok makan
  • Air 50 ml

Cara Membuat

Membuat Kulit Tart:

  1. Campurkan tepung terigu dan gula halus dalam wadah.
  2. Masukkan mentega dingin, aduk dengan garpu atau pastry blender hingga menjadi adonan berbutir-butir.
  3. Tambahkan kuning telur dan air es sedikit demi sedikit, aduk hingga adonan menyatu. Jangan terlalu banyak menguleni agar kulit tart tidak keras.
  4. Bungkus adonan dengan plastik wrap dan simpan di kulkas selama minimal 30 menit.
  5. Setelah dingin, gilas adonan setebal 3-4 mm. Cetak menggunakan cetakan tart. Tusuk-tusuk dasar tart dengan garpu agar tidak mengembang saat dipanggang.
  6. Panggang dalam oven yang sudah dipanaskan pada suhu 180°C selama 15-20 menit atau hingga kulit tart berwarna keemasan. Angkat dan dinginkan.

Membuat Krim Isian:

  1. Campurkan susu cair, gula pasir, tepung maizena, dan kuning telur dalam panci. Aduk rata.
  2. Masak dengan api sedang sambil terus diaduk hingga mengental dan meletup-letup.
  3. Angkat dari api, tambahkan ekstrak vanila dan mentega. Aduk hingga mentega meleleh dan tercampur rata.
  4. Dinginkan krim sebelum digunakan. Anda bisa menutup permukaan krim dengan plastik wrap agar tidak terbentuk lapisan kulit.

Menyusun Fruit Tart:

  1. Oleskan krim isian ke dalam kulit tart yang sudah dingin.
  2. Tata buah-buahan di atas krim sesuai selera.
  3. Jika menggunakan glaze, masak agar-agar, gula, dan air hingga mendidih dan gula larut. Saring dan dinginkan sebentar. Oleskan glaze tipis-tipis di atas buah-buahan agar terlihat mengkilap dan buah tidak cepat kering.
  4. Simpan fruit tart di kulkas sebelum disajikan agar lebih segar.
