Gula secukup rasa
Minyak masak untuk menumis
Air secukupnya
Cara-Cara Memasak:
Bersihkan Ikan: Bersihkan ikan dan potong mengikut saiz yang dikehendaki. Lumurkan dengan sedikit garam dan kunyit serbuk. Ketepikan.
Tumis Bahan Kisar: Panaskan minyak masak di dalam periuk. Tumis bahan kisar halus hingga naik bau dan pecah minyak. Pastikan bahan tumisan tidak hangit.
Masukkan Serai: Masukkan serai yang telah diketuk dan teruskan menumis sehingga aroma serai keluar.
Masukkan Asam Keping/Gelugur: Masukkan asam keping/gelugur ke dalam tumisan.
Masukkan Air dan Pes Asam Jawa: Tuangkan air secukupnya (bergantung kepada kepekatan kuah yang diinginkan). Masukkan pes asam jawa yang telah dibancuh. Kacau rata.
Perasakan: Perasakan dengan garam dan gula secukup rasa. Pastikan rasa masam, pedas, dan manis seimbang.
Masukkan Ikan: Masukkan ikan ke dalam kuah asam pedas. Biarkan ikan masak perlahan-lahan dan kuah meresap ke dalam ikan. Jangan terlalu kerap mengacau untuk mengelakkan ikan hancur.
Masukkan Daun Kesum dan Bunga Kantan: Apabila ikan hampir masak, masukkan daun kesum dan bunga kantan. Ini akan menambahkan aroma yang menyegarkan pada asam pedas.
Didihkan: Biarkan asam pedas mendidih seketika sehingga kuah sedikit pekat.
Sedia Dihidang: Asam pedas Sheila Rusly sedia dihidangkan bersama nasi putih panas.
